Divide the gingerbread cookie dough into two balls wrap with plastic wrap and chill for 3 hours.
Bake at 350 until puffy and lightly. In a large bowl cream butter and sugar until light and fluffy. Balls then roll in sugar. Apart on ungreased baking sheets.
